Penfolds Bin 407 Cabernet Sauvignon 2004 Friday, Mar 16 2007
Tasting Notes and Australia and McLaren Vale and Coonawarra and Langhorne Ck and Padthaway and Variety and Red and cabernet et al and Bordertown

I tried this over 2 nights, and I think it certainly looked better on the second night - if you want to try a bottle now then give it some air time. Smells like a classic Cabernet to me; none of this warm climate dry red masquerading as a Cabernet. Leaf, tobacco, a bit of tomato leaf, red currants, red capsicum, cedar, coffee beans and even some blackberries too. The palate is refined, with the fruit richness snuggled comfortably next to some savouriness. A nicely balanced wine that displayed some pretty good length too. I am glad to have a 6-pack (oh, a 5-pack now) tucked away. Cellar over the medium term, maybe longer.

But from Queensland.

There’s a goat in my ass.
Living mainly on grass.
They say the creature is stolen.
Yet he feeds on my colon.

When you say “tried over 2 nights”.. how are you storing the leftover bottle?
do you transfer immediately into a half bottle? stored in the fridge? or just simply re-seal the cork?

Usually just put the screwcap back on and put it in the fridge (when the weather is warmer to slow down oxidation).Usually for tasting they very rarely get below 2/3 full.

Always put in the fridge overnight. Sometimes put in a half bottle, but usually not.

does it get decanted first? or do you just pour out your tasting into a glass and let it air out in there?

As a minor aside (and more than a minor grumble), the 2004 version of this wine has had two price rises since the original review - its single bottle RRP would now be between $45 and $50. Undoubtedly some (larger) chains will still have stock at the mid-$20 mark by the doz so if you want this wine, grab it now. I certainly don’t think it is a $40 + wine.

I just had a bottle of 1998 Bin 407 - it was great… the wine still has 10+ years of life in it… this wine was a good example of “wine gets better with age” - lots of black fruits, mocha, oak/fruit/alcohol/tannins in outstanding balance…
